For TBT I’m posting an old recipe of mine. It’s one of my favorites, and I made it again for dinner tonight with a few variations:
-Used a diced fresh tomato instead of canned tomatoes.
-Skipped the couscous, all the vegetables with the sausage and served on hoagie rolls.

My father can cook only a few things well, sausage and peppers among them. When I moved out I wanted to replicate a few of my parents’ better recipes or improve upon them. And with this recipe, I think I’ve outdone him.
He usually serves his in sub form with a hoagie roll and mustard. I didn’t have any rolls in my pantry, but did have plenty of couscous, so I used that instead. And while the sausage does take a while to cook through – a little over an hour – it beats my father’s method which would require one to start mid-afternoon.
Rice would work fine in this recipe too, but I prefer couscous for its quick cooking times. Once you’ve got the ingredients together the couscous is done in about 5 minutes.
